 Ingredients:


  •  8 ounces (225 grams) elbow macaroni
  •  4 tablespoons (56 g) unsalted butter

  •  1/4 cup (30 grams) all-purpose flour

  •  2 1/2 cups (590ml) whole milk

  •  1 cup (240 mL) heavy cream

  •  2 cups (200 g) shredded sharp cheddar cheese
  •  1 cup (100 grams) grated Gruyere cheese
  •  1/2 cup (50 grams) grated Parmesan cheese
  •  1/2 teaspoon Dijon mustard
  •  1/4 teaspoon cayenne pepper (optional)

  •  1/2 cup (40 grams) panko breadcrumbs

 Instructions:


  1.  Preheat your oven to 375°F (190°C). Grease a 9x13-inch baking dish and set aside.
  2.  Cook macaroni according to package directions, but reduce cooking time by 2 minutes. Drain and set aside.
  3.  In a large saucepan, melt the butter over medium heat. Add the flour and stir constantly for about 2 minutes to form a roux.
  4.  Slowly pour in the milk and heavy cream, whisking constantly to avoid lumps. Cook for about 5 minutes or until the mixture thickens slightly.
  5.  Reduce the heat and add the cheddar, Gruyère and Parmesan cheeses to the saucepan. Stir until the cheese melts and the sauce is smooth.
  6.  Stir in Dijon mustard, cayenne pepper (if using), salt and pepper. Taste the sauce and adjust the seasoning as desired.
  7.  Add the cooked macaroni to the cheese sauce and mix until well coated. Transfer the mixture to the prepared baking dish.
  8.  In a small bowl, combine the panko breadcrumbs with a tablespoon of melted butter. Sprinkle the breadcrumb mixture evenly over the macaroni and cheese.
  9.  Bake in the preheated oven for about 25 minutes, or until the top is golden and bubbly.
  10.  Remove from oven and let cool for a few minutes. Garnish with fresh parsley before serving.
